Combine the sugar, boiling water, salt, and cream of tartar in saucepan, stir until the sugar is dissolved. Boil to 230ºF. on candy thermometer. Pour the sugar mixture slowly into egg whites, beating constantly. Add vanilla, beat until thick and creamy. Frosts two 9 inch layers |
