Baked Bluefish 

1 bluefish, cleaned
1 tablespoon of minced scallion stems
1 tablespoon of butter
1 cup of white wine
1 bay leaf
salt and pepper to taste
thyme to taste

Place the bluefish in a shallow baking dish. Sauté the scallion stems in butter, then add the wine, bay leaf, salt and pepper and thyme. Bring to a boil, then pour over the bluefish. Bake at 425ºF. oven until the fish flakes easily when tested with a fork.
