Place the bluefish in a shallow baking dish. Sauté the scallion stems in butter, then add the wine, bay leaf, salt and pepper and thyme. Bring to a boil, then pour over the bluefish. Bake at 425ºF. oven until the fish flakes easily when tested with a fork. |
