| Granny's Green Apple Cake Submitted: Gloria from Kirby, Texas (email, withheld by request) "I received this recipe from my aunt in the early 80's. I have made this for many of my church dinners, and people just love it!" Granny's Green Apple cake 3 cups of unsifted all purpose flour 2 cups of sugar 1 teaspoon of baking soda 1 teaspoon of salt 1/2 teaspoon of ground cinnamon 1 cup of vegetable oil 1/2 cup of milk 3 eggs 1 teaspoon of pure vanilla extract 3 Granny Smith apples, peeled, cored and diced 1 cup of chopped walnuts 1/2 cup of raisins I have also included a Lemon Glaze recipe that is perfect with this. |
| Preheat your oven to 350º F. In a large mixing bowl, blend the flour, sugar, baking soda, salt, cinnamon, oil, milk, eggs, and vanilla. I usually beat it on low speed with an mixer for about 3 minutes. Fold in the apples that you've diced, nuts, and raisins. Pour the batter into a greased and floured 9 or 10 inch tube pan. Bake in your preheated oven for 1 hour and 15 minutes. I usually check with a cake tester, my daughter uses a wooden toothpick. Once it is done cool the cake in a pan on a wire rack for about 10 minutes or so, then remove from the pan and cool completely. For the LEMON GLAZE I take 1 cup of confectioner's sugar and 2 tablespoons of lemon juice and mix in a small bowl until it is smooth. Slowly spoon it over the cake and watch my family's mouth water. |
