Golden Crunch Fried Chicken

one 2 1/2 pound chicken
1 cup of flour
2 teaspoons of salt
1/2 teaspoon of pepper
1 cup of buttermilk
1/2 teaspoon of soda

 

Disjoint the chicken and remove the skin. Combine the flour, salt, and pepper in a paper bag, then add 1 piece of chicken at a time and shake until well coated. Combine the buttermilk and soda in a bowl, then dip the chicken in the buttermilk and shake in the flour mixture again. Fry in deep fat at 350ºF. for about 20 minutes or until tender and brown. Drain on paper towels. Makes 6 servings
