| Hungry Man's Stuffed Pork Chops RecipesFromScratch.com10/20/06 2 double rib pork chops, cut 2 1/2 to 3 inches thick 1 teaspoon of dried rosemary 1/4 teaspoon of salt 1/8 teaspoon of pepper 2 tablespoons of butter or margarine 1/4 cup of chopped onion one 3 ounce can of chopped mushrooms, drained 1/2 cup of herb seasoned stuffing 1/2 cup plus 2 tablespoons of dry white wine 1/2 cup of chicken broth | | Cut a pocket in each chop by cutting into center of chops from rib side, parallel to rib bone and surface of chop; sprinkle with rosemary, salt and pepper. Melt the butter in a medium size skillet; cook onion in melted butter over moderate heat until the onion is tender; stirring occasionally. Remove from heat, stir in mushrooms, stuffing, and 2 tablespoons of wine. Stuff half of the stuffing mixture into each chop; place in a 8 x 8 x2 inch baking dish and pour 1/2 cup of wine and broth over chops. Bake, covered, in preheated 350ºF. oven until chops are done, about 1 1/4 to 1 1/2 hours. Serves 2 |
