| | Lobster Casserole 3 1/2 pound of mushrooms 1/4 cup of butter 4 tablespoons of flour 2 teaspoons of curry powder 2 cups of light cream 1 large tomato, peeled and diced 2 cups of cooked diced lobster 1 cup of hot mashed potatoes salt and pepper to taste |
| Wash and slice the mushrooms. Sauté in butter for 5 minutes. Add the flour and curry powder and stir until smoothly mixed. Add the cream and cook, stirring constantly, until thickened. Season to taste. Add the tomato and lobster and heat well. Pour into a 2 Quart Covered Casserole and pipe a border of mashed potatoes around the edge. Run under the broiler to brown lightly. Serves 4 |
