Mango Chili Sauce

1 medium sized , hard, green mango
1/2 cup of dried shrimp, rinsed
1 tablespoon of chopped garlic
5 fresh green chili peppers
1 teaspoon of shrimp paste
1 1/2 tablespoons of fish soy
1 teaspoon of sugar
1 teaspoon of chopped fresh coriander leaves
2 tablespoons of coarsely chopped or crushed peanuts  

Peel the unripe mango and shred it rather finely with a grater or food processor. Whir the softened shrimp, garlic, green chilies, and shrimp paste in a blender or food processor to a coarse paste. Or pound with a mortar and pestle. Add the shredded mango and blend gently. Do not allow it to become too smooth. Mix in the fish soy, sugar, and coriander leaves and adjust the flavor to suit your taste. Place in a serving dish and sprinkle with crushed peanuts before serving. Makes 2 cups
