| Mexican Spicy Burritos
1 fresh jalapeno, minced 4 cloves garlic, diced 1 tablespoon of tamari 1 teaspoon of honey 1 pound of firm tofu, cut into thin strips 4 medium size flour tortillas 1 teaspoon of olive oil Salsa |
| In a bowl, combine the jalapeno, garlic, tamari and honey. Add the tofu and marinate for 20 minutes. Preheat your oven to 350ºF. Stack the tortillas, wrap them in a slightly damp towel, and heat in the oven for 5 to 10 minutes. In a small skillet, heat the oil over medium high heat. Stir fry the onion until it is translucent. Add the tofu with its marinade, stir well to combine, and cook for 5 minutes more. Spoon the mixture into the tortillas, roll, and serve with salsa. |
