| | Orange Sauced Pork Chops 4 pork loin rib chops, cut 1/2 inch thick, about 1 to 1 1/2 pounds 1 tablespoon of cooking oil 1 tablespoon of brown sugar 1/2 teaspoon of finely shredded orange peel 1/4 teaspoon of salt 1/4 teaspoon of ground ginger 2/3 cup of orange juice 1 tablespoon of cold water 2 teaspoons of cornstarch |
| Trim any excess fat from the chops. In a skillet brown the chops slowly in hot oil. Remove the chops to a 9 x 9 x 2 inch baking pan. Combine the brown sugar, orange peel, salt and ginger, stir in the orange juice and pour it over the chops. Cover and bake in a 350ºF. oven for 45 to 50 minutes or until the chops are tender. Transfer the chops to a warm platter. Skim the fat from cooking liquid. Measure the liquid. If necessary, add water to cooking liquid to measure 3/4 cup total. In a saucepan combine the cold water and cornstarch, add the 3/4 cup liquid. Cook and stir until thickened and bubbly. Cook and stir for an additional 2 minutes more. Spoon some sauce over the chops. Makes 4 servings |
