| Swedish Meatballs 12
1 1/4 pound of hamburger 1/4 pound of ground pork 1 1/2 cup of soft bread crumbs 1 cup of light cream 1/2 cup of finely chopped onions 1 egg 1/4 cup of parsley flakes 1 1/2 teaspoon of salt 1/4 teaspoon of ginger Dash of pepper and nutmeg |
| Grind meats together twice. Soak bread in cream for about 5 minutes, cook onions in butter until tender. Mix meats, crumbs, 1 egg, parsley and seasonings and beat until fluffy, 5 minutes at medium speed. Form in 1 1/2 inch balls (easier shaping with wet hands and chilled meats). Brown lightly in 2 tablespoons butter. Remove meatballs from pan. Make gravy by stirring 2 tablespoons flour into drippings. Add 3/4 cup beef broth, 1/4 cup water and 1/2 teaspoon instant coffee. Heat and stir until gravy thickens. Put meatballs back into gravy. Cook slowly, covered, for 30 minutes. |
