| Scotch Shortbread 3/4 pound of butter 1/4 pound of sugar 1/2 pound of flour 1/4 pound of cornstarch |
| Knead sugar & butter with hands until well mixed; then knead in cornstarch & lastly the flour. The more time spent kneading the better the final product. Break off small pieces; press into flat circles; decorate with back of fork. Start baking in preheated 375ºF. oven. Immediately reduce temperature to 300ºF. & bake for 1 hour. True Scotch short bread improves with age.

1 1/2 cups of brown sugar 1 cup of lard 1 cup of butter 6 cups of flour 1 pinch of nutmeg
Knead dough thoroughly. Bake 1/2 hour at low temperature, 350ºF. |
