Zesty Stuffed Potatoes

2 large baking potatoes
1/4 cup of sour cream
1/4 cup ( 1 ounce) of shredded Cheddar cheese
1/4 teaspoon of salt
1/4 teaspoon of pepper
1 green onion, chopped
1 tablespoon of chopped pecans
1 tablespoon of bacon bits  

Scrub the potatoes and prick several times with a fork. Place the potatoes 1 inch apart on a microwave safe rack or paper towels. Microwave on high 10 to 12 minutes, turning and rearranging once, let it stand for 2 minutes. Cut a 1 inch lengthwise strip from the top of each potato. Carefully scoop out pulp, leaving shells intact. Mash potato pulp, stir in sour cream and the next 4 ingredients. Spoon into shells. Combine the pecans and bacon bits, if desired sprinkle on potatoes. Place on a microwave safe plate. Microwave at High for 1 minute or until potatoes are thoroughly heated. Makes 2 servings
