1 can of black beans 1 can of red kidney beans 1 can of great northern beans 1 can of baby lima beans 1 can of whole kernel corn 3 cups of Salsa; thick 1 teaspoon of ground cumin 1 teaspoon of Chili powder Vegetable cooking spray 8 Pieces chicken breasts 2 Yellow onions, thinly sliced 1 Red bell pepper, seeded 1 Green bell pepper, seeded 1 Yellow bell pepper, seeded Salt, to taste Pepper, to taste Parsley, chopped (optional) |

Preheat oven to 450ºF. Rinse and drain beans and corn; place in a large mixing bowl and toss with salsa, cumin and chili powder. Transfer to a 9x13-inch oven-to-table casserole dish lightly coated with vegetable cooking spray. Place chicken breasts on top of mixture in casserole dish and top with onion and bell pepper rings. Salt and pepper to taste. Cover tightly with foil. Bake at 450ºF. for 20-25 min. until chicken is cooked through. 4. Remove foil, garnish with parsley and serve hot.
