Remove the tough or damaged outer leaves from cabbage. quarter the cabbage and cut away the inner stalk. Remove thick, tough inner leaves, if desired. Chop the cabbage finely to make about 8 cups, using a knife, slicing blade of food processor or large grater. Place in a large mixing bowl. Grate the carrot into cabbage. whisk together the remaining ingredients in a small bowl. Pour over the cabbage and stir to coat thoroughly. Serves 6 - 8 |
