Chicken Liver Pate

2 onions, chopped
1/4 cup of butter or margarine
1 pound of chicken livers
2 teaspoons of prepared mustard
3/4 teaspoon of salt
1/4 cup of dry sherry
a dash of hot pepper sauce
Lettuce leaves
crackers or rye bread

 

Lightly grease 2 - 2 1/2 cup mold. Combine the onions and butter in a 1 1/2 quart glass bowl. Cover tightly with saran wrap, turning back the edge to vent. Microwave at 100% power 2 minutes. add the chicken livers, mustard and salt. Recover, leaving vent,, and microwave at 70% power for 5 minutes, stirring once. Add the sherry and hot pepper sauce. Recover and microwave at 100% power for 3 minutes. Cool to room temperature. Spoon into blender or food processor and process until smooth. Pour into prepared mold and chill until firm. Unmold onto plate, surround with lettuce and serve with crackers. Makes 2 cups
