Cherries Jubilee 

2/3 cup of sugar
2 tablespoons of cornstarch
1/8 teaspoon of salt
1/2 cup of sweet red wine
1 1/2 pounds of sweet or bing cherries, pitted
1/3 cup of cognac
1 quart of vanilla ice cream

 

Combine the sugar, cornstarch, and salt in a 3 quart glass bowl or casserole. Stir in 1/2 cup of water and wine until smooth. Add cherries and cover tightly, turning back the edge to vent. Microwave at 100% power for 8 - 9 minutes, or until the cherries are tender and the sauce is thickened, stirring once. Meanwhile, scoop ice cream into dessert dishes. Place cognac in 1 cup glass measure. Microwave at 100% power for 30 - 40 seconds, or until warm. Pour the cherries into shallow serving dish. Pour warmed cognac gently and evenly over cherries. Ignite carefully with long match. When flame goes out, ladle cherries over ice cream and serve immediately. Makes 6 - 8 servings
