| Pour oil into 3 quart microproof casserole. Add beef, stir to coat. Mix in tomatoes, onion, garlic, salt, and pepper. Cover and place in oven. Cook on high for 2 minutes. Stir, cover. Cook on high for 2 minutes. Add the green peppers. Dissolve cornstarch in soy sauce. Stir into beef mixture. Cover. Cook on high for 5 minutes. Serve over hot rice. Top with chow mein noodles, if desired. Makes 4 servings |
