Rustica Casserole

 

Rustica Casserole

8 ounces of tagliatelle, cut in half
2 tablespoons of olive oil
1/2 pound of Italian sweet sausage, thinly sliced
1/2 cup of shredded mozzarella cheese
1/4 cup of grated Parmesan cheese
3 eggs, lightly beaten
1/2 pound prosciutto, diced
2 tablespoons of salt
2 tablespoons of chopped parsley


Cook tagliatelle in boiling, salted water until almost tender, following package directions. Drain. Pre heat oven to 350ºF. Heat oil in frying pan. Add sausage and cook for 5 minutes, until lightly browned. Remove from heat and combine with cheeses, eggs, prosciutto, pasta and salt. Turn mixture into buttered, 9-inch round casserole dish.
Cover with foil and bake for 45 minutes. Remove from oven, sprinkle with parsley, and serve. Serves 4
