| Rustica Casserole
8 ounces of tagliatelle, cut in half 2 tablespoons of olive oil 1/2 pound of Italian sweet sausage, thinly sliced 1/2 cup of shredded mozzarella cheese 1/4 cup of grated Parmesan cheese 3 eggs, lightly beaten 1/2 pound prosciutto, diced 2 tablespoons of salt 2 tablespoons of chopped parsley | |
Cook tagliatelle in boiling, salted water until almost tender, following package directions. Drain. Pre heat oven to 350ºF. Heat oil in frying pan. Add sausage and cook for 5 minutes, until lightly browned. Remove from heat and combine with cheeses, eggs, prosciutto, pasta and salt. Turn mixture into buttered, 9-inch round casserole dish. Cover with foil and bake for 45 minutes. Remove from oven, sprinkle with parsley, and serve. Serves 4 |
