| Christmas Bread (Norway)
1 cup of warm milk 1/2 cup of sugar 1/2 teaspoon of salt 1/2 teaspoon of powdered cardamom 1 package of yeast 1 egg, slightly beaten 2 tablespoons of soft butter 3 1/4 to 3 1/2 cups of sifted flour 1/4 cup of chopped citron 1/2 cup of raisins 1 egg white, beaten (optional) |
| Mix milk, sugar, salt and cardamom together. Stir in yeast; let stand, stirring occasionally until yeast is dissolved. Add egg and butter. Mix in flour, citron and raisins using spoon first and hands later. Knead; let rise twice in warm place, covered. Shape into round loaf; place in buttered 9-inch casserole. Cover; let rise for 45 to 60 minutes or until doubled in bulk. Glaze with egg white before baking, if desired. Bake at 350ºF. for 30 to 40 minutes. |
