| Finnish Coffee Cake
1/2 cup of scalded milk 1/2 cup of butter 1/4 cup of sugar 1 dry yeast softened in 1/2 c. warm water 3 cardamom seeds pounded in a cloth 2 beaten eggs 3 1/2 cups of flour 1/2 teaspoon of salt |
| Combine milk, butter, sugar and salt. Cool to lukewarm. Add yeast, eggs, flour and cardamom. Mix well with large spoon. Place in bowl, cover and let rise in a warm place until doubled in size (about 1 hour). Punch down and let rise in cool place 30 minutes. Divide in 6 pieces. Braid 3 strips together and place in greased bread pans. Bake at 375ºF. for 25 to 30 minutes. Brush with icing of 1 cup powdered sugar and 1 1/2 teaspoons milk. Sprinkle with nutmeat and cherries.
