| Pound the steak well on both sides, pound seasoned flour into steak. (mix the flour, salt & pepper) Brown the suet in heavy iron skillet to render fat, discard suet. Brown steak quickly in fat, discard suet. Brown steak quickly in fat. Add enough tomato juice to cover steak well. Simmer slowly for 2 hours, adding tomato juice as needed to keep steak covered. Remove steak, thicken juice for gravy. Makes 4 - 5 servings |
