Combine the flour, 1 teaspoon of salt, and 1/4 teaspoon of pepper' pound into meat. In a large skillet brown meat on both sides in hot shortening* Top with onion and tomatoes. Cover; cook over low heat until tender, about 1 1/2 hours. Add green pepper, cook 15 minutes more. Skim off excess fat. Thicken juices, if desired. Season to taste. Makes 6 - 8 servings *Oven directions - transfer the browned meat to a baking dish. Top with onion and tomatoes. Bake, covered at 350ºF. for 1 1/2 hours. Uncover; add green pepper and bake for 15 minutes more, basting meat occasionally. |
